Guilt Free Raw Choc Fudge Slice


As part of the FJ Feb Fast challenge, we have asked members to refrain from food and drinks with refined sugars. In deeper detail, when asked, we have suggested to look at the nutritional information label and consume only if the item is less than 10g per 100g. This got me thinking about how I'll get my treat and specifically protein balls, which for many of us are treated as a healthy sweet treat. My mission was to make one without dried fruit that still tasted ok. I didn't expect to like it so much!

  • 1 banana

  • 3/4 cup quinoa flake (you could use oats but may need to adjust moisture)

  • 1/4 cup chia, pepita or sunflower (to make it interesting & nutritious in Omegas)

  • 1/2 tsp natural vanilla extract

  • 5 tbs raw cacao (choc protein powder variation recipe to follow)

  • 1/2 cup 100% natural peanut butter

Blend like crazy, press into an oblong shape plastic container approx 15 X 8cm. I use baking paper between my fingers and the mix to press it in - less sticky!

  • 4 tbsp cacao

  • 4 tbsp coconut oil

  • 1/2 tsp vanilla extract

Melt the coconut oil and stir all ingredients well. Pour over the slice. Refrigerate until hardened. Turn the slice out, and cut with a large knife fudge side up to avoid cracking the chocolate :) This one will stay as a regular in our house. It's a hit!
