Mix all the dry ingredients in a large mixing bowl and then add vanilla, coconut oil, honey and almond milk. blend with your hands. Press into a large slice tin 1/5 cm thick - lined with baking paper. Let stand for 1 hr prior to cooking.
Heat the oven to 160 and cook for 30 minutes - check it's ready by hitting the middle with the back of a spoon and it should bounce. Increase to 180 and cook for a further 10 minutes (or until golden - keep an eye on it)
This is a delicious snack on the run!
