Quinoa & Raw Salad for 2

Black, Red or White Quinoa (or brown rice works as well). Quinoa is easy to buy at Woolworths in 500g bags and is better for you.
1 raw corn cob (cut the kernels off)
1/2 cup of finely chopped parsley
1/2 cup of finely chopped mint (coriander is good as well. Mint perfectly compliments beetroot though, in my opinion!)
1/2 cup of shredded raw beetroot (don't bother peeling it, just give it a good scrub with a brush or cloth and water)
1/3 cup of finely chopped shallot
1/2 an avocado
1/2 a lemon (juice only)
1 level tbsp of olive oil
pepper, salt and chilli flakes to taste
*optional sprinkle with chia and/or sesame seeds (Woolworths) *optional sprinkle crumbled feta *optional add steamed or grilled chicken breast strips or a can of tuna *optional one boiled egg Cook up 1 cup of quinoa by using the stove top absorption method as you would cook rice. Add 1 and 2/3 times water, bring to boil & then simmer until you hear the quinoa start to make popping sounds. Take it off the heat, fork through and let sit for 5 minutes or more. Add all ingredients to a nice big mixing bowl, stir and serve. P.S. You can cook a bigger batch of quinoa and keep in the fridge for the next day/s salads. It's also great for breakfast with fruit and yoghurt.
