Eat as much as you like... Green Soup
To start, heat 1 tablespoon of Olive Oil in medium heat soup pot
2 chopped onions
2 cloves garlic
Pepper & Salt
COVER until onion softens.
Then add, 1 full head of broccoli - rough chopped
Trimmed and chopped bunch of spinach
1 cup of chicken or vege stock
3 cups of water
COOK for 20 minutes and then blend like crazy. Serve immediately.
DRIZZLE with olive oil & sprinkle cayenne pepper.
To make more of meal of it, add a small amount of shredded steamed chicken breast and/or a spoonful of cooked quinoa. A dollop of greek yoghurt is also delicious and good for your belly!
