Brekky Bar
No time for breakfast? Try these delicious, nutritious and filling brekky bars!
1 cup spelt oats
1 cup puffed brown rice
1/2 cup psyllium husks
1/2 cup chia
1/2 cup almonds
1/2 cup sesame seeds
1/2 cup flax seeds
1/2 cup sunflower seeds
1/2 cup pepita
1 tsp vanilla extract
1 tsp cinnamon
2 tsp honey
2 tsp coconut oil (melted)
1/2 cup almond milk
Mix all the dry ingredients in a large mixing bowl and then add vanilla, coconut oil, honey and almond milk. blend with your hands. Press into a large slice tin 1/5 cm thick - lined with baking paper. Let stand for 1 hr prior to cooking. Heat the oven to 160 and cook for 30 minutes - check it's ready by hitting the middle with the back of a spoon and it should bounce. Increase to 180 and cook for a further 10 minutes (or until golden - keep an eye on it) This is a delicious snack on the run!
