The Jacinta Peanut Rice Pop Slice
Yesterday one of our most loved members celebrated her birthday and so I decided to make a slice with her favourite flavours in mind to surprise her.
We decided in the gym this morning the give this recipe her name :) Happy Birthday Jacinta.
I know (from her food diary) that she is a peanut butter enthusiast and let's just she has an abundant personality with loads of different types of friends so I gave it texture, depth and richness!
It tastes amazing, interesting, keeps my attention till the end of the experience and looks pretty lovely too! Just like Jacinta!
Ingredients are easy:
1 cup of crunchy 100% natural organic peanut butter
1 cup coconut oil
1/4 cup maple syrup
A pinch of ground himalayan salt
A couple of drops of vanilla
1 cup brown rice pops
1/2 cup raw cacao
Melt 1/2 cup of the coconut oil and pour into food processor or blender. Add peanut butter, maple syrup, salt & vanilla and blend well.
Pour into rectangular plastic tupperware container, pour 2/3 of the rice pops covering the top of the base. Cover and place in freezer for 20- 30 minutes.
Melt the remaining coconut oil in a glass bowl. Add the raw cacao. Mix well with a spoon until smooth.
Pour over the base. Top with remaining rice pops (cover the entire chocolate top.
Refrigerate for an hour or so and then slice upside down (to get a neater cut).
