Summer Time Lemon Coconut Balls

We have a couple of options on this recipe. Because some people prefer high protein, no carb and others like carbs with less calories, I have made this recipe a couple of ways.

Option 1:

  • 2/3 cup of raw almonds

  • 1 tbsp flax seed

  • 1 tbsp sunflower seeds

  • 2 scoops vanilla protein powder

  • Juice & zest of one lemon

  • 2 tbsp of coconut oil

  • 2 tbsp of hot water

  • 2 tbsp shredded coconut

  • 1 tbsp of honey OR 1 tsp of stevia

Place the almonds in the food processor and mix until the mix is a chunky almond meal. Add the seeds & protein powder and mix again until the mix is fine (except flax). Add the zest, juice, oil, stevia or honey and hot water and mix well. Roll and coat in coconut. Makes 20 x 2cm balls (approx 60 calories each).

Option 2:

  • 2/3 cup of raw almonds

  • 1/3 cup of oats

  • 2 scoops vanilla protein

  • Juice & zest of one lemon

  • 2 tbsp of coconut oil

  • 2 tbsp of hot water

  • t tbsp shredded coconut

  • 1 tbsp of honey OR 1 tsp of stevia

Place the almonds in the food processor and mix until the mix is a chunky almond meal. Add the oats and protein and mix well. Add the zest, nice, oil, honey or stevia and hot water and mix well. Roll and coat in coconut. Makes approx 20 2cm balls (approx 50 calories)
